Why we made this one
Most upsell training is a workshop that fades within a fortnight. This is the opposite: one card, four phases, and a method for teaching a single phrase a week on shift. It is the same material we put in front of service teams on client properties.
What is inside
- The four habits: no yes/no questions, recommend as yourself, the nod, the empty glass rule
- A swap table — the sentence to stop using and the one to replace it with
- Scripts for all four phases: arrival, the order, dessert, the check-back
- How to make it stick: one phrase a week, run as a shift game
- Which POS metrics to measure instead of counting attempts
How to use it
- 1
Replace the bracketed items
Swap in dishes from tonight's menu. Generic scripts get half-used because the server still has to decide what to recommend; specific ones remove the thinking.
- 2
Print double-sided and laminate
A6 works well as a pocket card. In humid climates, laminate — paper behind a bar does not survive.
- 3
Teach one phrase per week
Not all four at once. A server given one sentence uses it by Wednesday without thinking; given fifteen techniques, they use none.
- 4
Measure the outcome, not the effort
Dessert attachment rate, sides per main, drinks per cover. All from your POS, and none of it gameable by enthusiasm.
Or have us do it
This is the do-it-yourself version of work we do for hotels and resorts every month. If you would rather not spend the afternoon on it — we train F&B teams, and we will send you a free snapshot of what we find at your property first.

F&B upselling scripts for hotel staff (that do not sound like selling)
Most staff are not unwilling to upsell. Nobody ever taught them a sentence that does not feel pushy.
How to train hotel staff to upsell (in shifts, not workshops)
Four-hour workshops do not change behaviour. One phrase, coached for a week, does.
Upselling without being pushy: the difference is the question
Staff are not avoiding the sale. They are avoiding feeling like a salesperson.
