Maldives
Hotel F&B and menu consulting in the Maldives
The Maldives is the most captive F&B environment on earth. One island, one operator, no alternative. That should make it the easiest revenue-per-guest market to run, and in practice the captivity creates its own problems.
The market here
With no competing outlets, the constraint is not capture but willingness. Guests arrive already sensitive about on-island pricing, frequently on a board basis that removes most purchase decisions, and the reputational cost of feeling exploited is severe in a market that lives on review scores.
What we find in the Maldives
Board basis removes the decision entirely
Half board and all-inclusive rates are commercially sensible and they eliminate most spending moments. The properties that do this well build a clear, genuinely premium tier above the included offer rather than relying on guests going off-plan by accident.
Pricing resentment shows up in reviews
Nowhere else does F&B pricing appear so consistently in guest reviews. Stacked charges and opaque supplements do more damage here than the revenue they generate, because the score they cost you feeds directly back into rate.
Excursion and sunset moments left to chance
Sunset cruises, sandbank dining and private beach setups are the highest-margin experiences on the island and frequently the least systematically offered. Where these are mentioned once at check-in and never again, most guests never learn they exist.
In-villa dining treated as an inconvenience
Long delivery promises and restrictive hours suppress an outlet that should be very strong given villa-heavy layouts and guests who genuinely want to stay put.
When to start
Peak runs November–April, with a secondary July–August European peak. The May–October low is when structural work should happen.

Pool bar revenue: the most under-optimised space in your resort
A full pool with no way to order is not a quiet outlet. It is a queue of people who gave up.
